Chicken enchiladas and strawberry shortcake 03.09.10

Tonight’s meal was chicken enchiladas followed by strawberry shortcake. Vickey selected the enchilada recipe from All Recipes, our favorite online recipe site. Since she had a meeting with a student’s parents after school and Eliana had piano lessons, it was my job to pick up both kids, get Ellie to piano lessons, pick up a few items at the grocery store, and prepare our meal.
Vickey’s brother, Charley, and his fiancé, Johanna, joined us for dinner.
I have to say, the enchilada recipe is one of the easiest and best tasting I’ve had. Of course, I doctored it up a bit with a little extra seasoning (yes, I’m an Italian cook), but it was pretty much as outlined on All Recipes. We also doubled the recipe so we’ve got a 9 x 13 pan of enchiladas in the freezer ready to go for a future meal.
